- 6 Russet potatoes peeled and diced
- 1 Yellow onion chopped
- 3 cloves Garlic minced
- 4 cups Chicken broth
- 1 cup Heavy cream
- 1 cup Milk whole milk recommended
- 2 tablespoon Butter
- 2 tablespoon All-purpose flour
- 1 teaspoon Salt or to taste
- ½ teaspoon Black pepper
- ½ teaspoon Paprika
- 1 cup Shredded cheddar cheese optional topping

- Add potatoes, onion, garlic, and chicken broth to the slow cooker.
- Cover and cook on low for 6 to 8 hours (approximately 250 minutes) until potatoes are tender.
- In a small saucepan, melt butter and whisk in flour to create a roux.
- Whisk in the milk and bring mixture to a simmer until slightly thickened.
- Stir the milk mixture and heavy cream into the slow cooker and mix well.
- Season with salt, pepper, and paprika. Use immersion blender if desired. Serve topped with shredded cheese.
