  • 6 Russet potatoes peeled and diced
  • 1 Yellow onion chopped
  • 3 cloves Garlic minced
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1 cup Milk whole milk recommended
  • 2 tablespoon Butter
  • 2 tablespoon All-purpose flour
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black pepper
  • ½ teaspoon Paprika
  • 1 cup Shredded cheddar cheese optional topping

  • Add potatoes, onion, garlic, and chicken broth to the slow cooker.
  • Cover and cook on low for 6 to 8 hours (approximately 250 minutes) until potatoes are tender.
  • In a small saucepan, melt butter and whisk in flour to create a roux.
  • Whisk in the milk and bring mixture to a simmer until slightly thickened.
  • Stir the milk mixture and heavy cream into the slow cooker and mix well.
  • Season with salt, pepper, and paprika. Use immersion blender if desired. Serve topped with shredded cheese.

Top with green onions or bacon bits for extra flavor.
