This Crispy Sweet Chilli Chicken is a quick and flavorful dish made in the pressure cooker, combining an irresistible sticky glaze with crispy chicken for a delicious weeknight dinner.

- 500 g Chicken thighs boneless, skinless, cut into pieces
- ½ cup Cornstarch for coating
- ¼ teaspoon Salt
- ¼ teaspoon Black pepper
- 2 tablespoon Oil for sautéing
- 3 tablespoon Sweet chilli sauce
- 1 tablespoon Soy sauce
- 1 tablespoon Honey
- 1 teaspoon Garlic paste
- 1 teaspoon Ginger paste
- 1 tablespoon Rice vinegar
- 1 tablespoon Water
- 1 tablespoon Sesame oil
- 1 teaspoon Chili flakes optional
- 1 tablespoon Sesame seeds for garnish
- 2 tablespoon Spring onions sliced for garnish

- In a bowl, mix chicken pieces with salt, pepper, and cornstarch until well coated.
- Turn on Sauté mode on your pressure cooker. Add oil and sauté chicken until lightly browned on all sides.
- In a separate bowl, mix sweet chilli sauce, soy sauce, honey, garlic paste, ginger paste, rice vinegar, water, sesame oil, and chili flakes.
- Pour sauce mixture into the pressure cooker and stir to coat chicken evenly.
- Close the lid and cook on high pressure for 5 minutes. Allow natural pressure release for 5 minutes, then quick release.
- Switch to Sauté mode again and cook sauce for a few more minutes to thicken slightly while stirring gently.
- Once thickened and chicken is coated in glossy sauce, turn off heat.
- Serve hot, garnished with sesame seeds and sliced spring onions.
Notes
For extra crispiness, lightly pan-fry chicken before pressure cooking. Adjust chili flakes to your spice tolerance.
