Instructions
In a bowl, mix chicken pieces with salt, pepper, and cornstarch until well coated.
Turn on Sauté mode on your pressure cooker. Add oil and sauté chicken until lightly browned on all sides.
In a separate bowl, mix sweet chilli sauce, soy sauce, honey, garlic paste, ginger paste, rice vinegar, water, sesame oil, and chili flakes.
Pour sauce mixture into the pressure cooker and stir to coat chicken evenly.
Close the lid and cook on high pressure for 5 minutes. Allow natural pressure release for 5 minutes, then quick release.
Switch to Sauté mode again and cook sauce for a few more minutes to thicken slightly while stirring gently.
Once thickened and chicken is coated in glossy sauce, turn off heat.
Serve hot, garnished with sesame seeds and sliced spring onions.
Notes
For extra crispiness, lightly pan-fry chicken before pressure cooking. Adjust chili flakes to your spice tolerance.
