One Pot Cheesy Chicken Pasta

- 3 medium boneless, skinless chicken thighs (breasts work too)
- 1 medium onion diced
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 16 oz dry pasta (rigatoni used)
- 24 oz pasta sauce jar
- 1 jar water to fill empty pasta sauce jar
- ¾ cup mozzarella cheese divided
- ½ cup Parmesan cheese
- salt to taste
- pepper to taste

- In a large saucepan, heat the oil over medium high heat. Add in the chicken and cook until no longer pink, around 5 minutes. Transfer to a plate.3 medium boneless, skinless chicken thighs

- Mix in the pasta sauce, refill that jar with water and add to the saucepan. Bring to a boil, then reduce the heat to medium heat.24 oz pasta sauce, 1 jar water
- Add in the cooked chicken and pasta. Stir then cover and cook for around 10-15 minutes or until the pasta is cooked to your liking.3 medium boneless, skinless chicken thighs, 16 oz dry pasta
- Mix in ¼ cup mozzarella cheese and Parmesan.¾ cup mozzarella cheese, ½ cup Parmesan cheese
