One Pot Cheesy Chicken Pasta

  • 2 tablespoon avocado oil
  • 3 medium boneless, skinless chicken thighs (breasts work too)
  • 1 medium onion diced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 16 oz dry pasta (rigatoni used)
  • 24 oz pasta sauce jar
  • 1 jar water to fill empty pasta sauce jar
  • ¾ cup mozzarella cheese divided
  • ½ cup Parmesan cheese
  • salt to taste
  • pepper to taste

  • In a large saucepan, heat the oil over medium high heat. Add in the chicken and cook until no longer pink, around 5 minutes. Transfer to a plate.

  • In the same saucepan, add in the onion, Italian seasoning and garlic powder, and cook until soft, around 2 minutes. Season with salt and pepper.

  • Mix in the pasta sauce, refill that jar with water and add to the saucepan. Bring to a boil, then reduce the heat to medium heat.

  • Add in the cooked chicken and pasta. Stir then cover and cook for around 10-15 minutes or until the pasta is cooked to your liking.

  • Mix in ¼ cup mozzarella cheese and Parmesan.
    ¾ cup mozzarella cheese, ½ cup Parmesan cheese
  • Mix in the remaining mozzarella cheese and top with dried parsley.
    ¾ cup mozzarella cheese
  • Serve immediately.

Notes

If you want some extra heat, this is really good with some red pepper flakes sprinkled in.
