Instructions
In a large saucepan, heat the oil over medium high heat. Add in the chicken and cook until no longer pink, around 5 minutes. Transfer to a plate.
3 medium boneless, skinless chicken thighs
In the same saucepan, add in the onion, Italian seasoning and garlic powder, and cook until soft, around 2 minutes. Season with salt and pepper.

Mix in the pasta sauce, refill that jar with water and add to the saucepan. Bring to a boil, then reduce the heat to medium heat.

Add in the cooked chicken and pasta. Stir then cover and cook for around 10-15 minutes or until the pasta is cooked to your liking.

Mix in ¼ cup mozzarella cheese and Parmesan.

Mix in the remaining mozzarella cheese and top with dried parsley.

Notes
If you want some extra heat, this is really good with some red pepper flakes sprinkled in.
