- 1 tablespoon olive oil
- 1 onion diced
- 1 green bell pepper diced
- 4 cloves garlic minced
- 2 lbs ground beef
- 3 tablespoon chili powder
- 1 teaspoon ground cumin
- 2 cans kidney beans drained and rinsed
- 2 cans diced tomatoes with juice

- Heat olive oil in a large pot over medium heat.
- Add diced onion and bell pepper. Cook until softened, about 5 minutes.
- Stir in minced garlic and cook for 1 minute more.
- Add ground beef and brown until no longer pink. Drain any excess fat.
- Add chili powder and cumin, stir to coat meat and vegetables.
- Stir in beans and tomatoes. Bring to a simmer, cover, and cook on low heat for 1 hour.
