- 1.5 lbs chicken thighs boneless, skinless
- 1 cup mango fresh or frozen, chopped
- 2 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 2 tablespoon honey
- 2 cloves garlic minced
- 1 teaspoon ginger grated
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- 1 teaspoon cornstarch optional, for thickening
- 2 tablespoon water for slurry
- 1 tablespoon lime juice fresh
- 1 teaspoon chili flakes optional, for heat
- ½ teaspoon salt or to taste
- ¼ teaspoon black pepper
- 2 tablespoon green onions sliced, for garnish
- 1 tablespoon toasted sesame seeds for garnish
- 1 cup cooked rice or noodles for serving

- In a blender, combine mango, soy sauce, rice vinegar, honey, garlic, ginger, lime juice, and chili flakes. Blend until smooth to create the glaze.
- Heat olive oil and sesame oil in a skillet over medium heat. Add chicken thighs and sear for 3-4 minutes on each side until golden brown.
- Pour the mango glaze over the chicken. Reduce heat to low, cover, and let simmer for 10-15 minutes until chicken is cooked through.
- Optional: Mix cornstarch and water to form a slurry. Stir into the sauce to thicken it during the last few minutes of cooking.
- Once thickened and chicken is fully coated in the glaze, remove from heat.
- Garnish with green onions and sesame seeds. Serve hot over rice or noodles.
Notes
This dish pairs wonderfully with jasmine rice or soba noodles. Adjust chili flakes to taste depending on spice preference.
