You catch the smell through the steam vent and suddenly you are starving. That kinda crispy lemon pepper scent gets you right in the feels. You sense the kitchen warming up and your mouth watering as the chicken cooks in the pressure cooker. It's like a little something extra from your favorite spot but made with a twist that you got control over.

Now you remember how you gotta marinate those chicken breasts in buttermilk first. That step is the secret to juicy chicken that stays tender under all that crispy coating. The lemon pepper seasoning sorta weaves itself through the meat while it soaks up all that creamy goodness. You notice your heart racing, ready to dig in.
Pressure cooking might sound kinda scary but trust me it works real good here. The pressure build inside the pot like a little steam engine getting everything cooked fast without drying things out. You recall the gentle hiss and steam cues that tell you it's done and ready for that natural release. Suddenly you're not just hungry. You're downright excited for that sandwich moment.
The Real Reasons You Will Love This Method
- Faster cooking time thanks to the pressure build inside your cooker.
- Chicken stays juicy and tender 'cause of the sealed in broth depth and marinate.
- Gets that crispy coating without sitting in hot oil forever.
- Natural release helps keep everything moist and just right.
- Sealing ring traps all the flavorful steam for max taste.
- Less mess and kitchen chaos than traditional frying alone.
- You get to control the seasoning and spice levels easy.
All the Pieces for This Meal
First, you gotta get 2 large chicken breasts, sliced lengthwise. Then grab 2 cups of buttermilk to soak them in. The marinade is super key so don't skip it. You'll want 1 tablespoon of lemon pepper seasoning without salt. I use DASH for that, and it kinda packs a punch.
Next, it's the dry mix. Take 2 cups flour and ⅓ cup cornstarch as your base. You gotta add half a tablespoon lemon pepper seasoning, 2 teaspoons each of paprika, chili powder, cayenne pepper, onion powder, and garlic powder. Don't forget 2 teaspoons salt for balanced flavor.

For the dipping batter, an egg comes in handy. You'll also need 2 and a half to 3 cups of canola oil to get that perfect fry on your chicken. Then for your sandwich fixings, 4 brioche buns are a must with some pickle slices for zing.
To finish your sandwich with style, toss together 1 ranch packet seasoning, 1 cup mayonnaise, ¼ cup buttermilk, half a jalapeno chopped and deseeded, ¼ cup verde sauce, and some fresh chopped cilantro. This sauce is gonna bring it all together.
How It All Comes Together Step by Step
Start by marinating those chicken breasts in the buttermilk with lemon pepper seasoning for at least 30 minutes. This soak helps that broth depth get deep in the meat and tenderize it right up.
Meanwhile, mix the flour, cornstarch, lemon pepper seasoning, paprika, chili powder, cayenne pepper, onion powder, garlic powder, and salt in a big bowl. This dry mixture is the crispy goodness for your chicken's outside.
Heat your canola oil in a deep skillet over medium heat. You want it hot enough so the coating gets crispy fast but not burning. Around 350 degrees if you got a thermometer helps.
Take your chicken from the marinade, let the extra buttermilk drip off. Then dredge them in your dry mix, covering them fully. This part is super important for that lemon pepper fried flavor.
Fry the chicken for 6 to 8 minutes on each side until golden brown and cooked through. You'll see that beautiful color and smell that got you excited from the start. Put on paper towels to drain extra oil.
Valve Hacks You Need to Know
- Check your sealing ring before cooking. If it's got cracks or is too stretched, your pressure build won't be right.
- Listen for the steam cues carefully to know when to start your natural release. The gentle hiss changes as pressure shifts.
- When natural release is done, open the valve slowly to avoid splatters or burns.
- If you're short on time, quick release works but you might lose a tiny bit of broth depth.
- Keep a small towel handy to wipe around the valve if oil or moisture gets messy during cooking.
Put together your sandwich by spreading your jalapeno ranch verde mayo sauce on the brioche bun, layer your fried chicken, add pickle slices, then the top bun. This kinda homemade flavor combo hits just right.

That First Bite Moment
When you sink your teeth in, you notice the crispy outer crust crackling just right. It's lemon pepper seasoning makin' every bite sing. The chicken inside is juicy and tender, thanks to that perfect broth depth from the buttermilk marinade.
The bite hits with a little bit of heat from chili and cayenne but balanced by the cool creamy ranch verde sauce. The pickles add that sharp crunch, making each mouthful kinda addictive.
You remember how the brioche bun softly holds it all together without overpowering the flavor but more like a hug for your taste buds. You feel satisfied and kinda proud you cooked this up all in your pressure cooker. This sandwich moment is golden.
Smart Storage That Actually Works
If you got leftovers, wrap the chicken in foil or parchment paper first. This helps keep that crispy coating intact and not soggy from trapped steam.
Store your sandwiches in an airtight container but keep the bun separate if you can. Reheat the chicken in a skillet or air fryer to bring back the crisp instead of microwave.
The jalapeno ranch verde sauce holds up well in a sealed jar in the fridge for up to 5 days. Just give it a little stir before your next sandwich fix.
Everything Else You Wondered About
- Can I use frozen chicken breasts for this? You can but gotta thaw them fully first, otherwise cooking times and broth depth won't be right.
- What if I don't have buttermilk? Mix 1 cup milk with 1 tablespoon lemon juice or vinegar, let it sit 5 minutes to kinda sour up.
- Is it okay to swap canola oil for another type? Sure, just pick a neutral oil like vegetable or peanut that handles frying well.
- What's the secret to the crispy coating? The combo of flour and cornstarch with all those spices plus frying at the right temp makes that happen.
- How long should I natural release? About 10 minutes usually does the trick for juicy tender chicken with no steam loss.
- Can I make this sandwich spicier? Yeah, add more jalapeno or cayenne to your mix and sauce according to your heat love.

Instructions
Instructions
- In a large bowl, combine 2 cups buttermilk and 1 tablespoon of lemon pepper seasoning. Add the chicken, cover and refrigerate for at least 2 hours.
- While the chicken is marinating, combine all the ingredients for the green ranch in a blender and mix until smooth. Pour into a squeeze bottle or bowl. Refrigerate until ready to use.
- Remove the chicken from the buttermilk and set on a plate. DO NOT discard the buttermilk. We are using this as part of our dredging. Add the egg to the buttermilk and whisk together.
- In a separate bowl, combine the flour, cornstarch, lemon pepper, paprika, cayenne pepper, chili powder, onion powder, garlic powder, and salt. Stir.
- Now dip the chicken in the flour and then into the buttermilk. Let the excess buttermilk drip off and then dip one more time in the flour. Make sure to coat well. I like to press it down with a fork and pat the flour into the chicken.
- Heat the oil over medium heat until 350℉. I use a large cast iron pan or Dutch oven. Carefully add 1 or 2 chicken breasts to the oil. Do not overcrowd the pan. Cook until golden and flip. Chicken is done when thermometer reads 165℉. Move the chicken to a cooling rack or plate with paper towels while you cook the remaining chicken.
- After the chicken is ready, cut them in half. Assemble the sandwich by toasting the buns. Layer sliced pickles on the bottom bun, chicken, green ranch, and top bun. ENJOY!
