The Best Vegetable Quesadillas

- 8 Flour tortillas medium size
- 1 cup Shredded cheese cheddar or Mexican blend
- 1 cup Bell peppers diced
- 1 cup Onion diced
- ½ cup Corn kernels fresh or frozen
- ½ cup Black beans rinsed and drained
- 1 tsp Cumin ground
- 1 tbsp Olive oil

- Heat olive oil in a skillet over medium heat.
- Add diced onions and bell peppers, sauté until softened.
- Stir in corn, black beans, and cumin; cook for 2-3 minutes.
- Place a tortilla in a clean skillet over medium heat.
- Sprinkle shredded cheese evenly over the tortilla.
- Add the sautéed vegetable mixture on top of the cheese.
- Top with another tortilla.
- Cook until the bottom tortilla is golden brown, then flip carefully and cook the other side until golden and cheese is melted.
- Remove from skillet and cut into wedges.
- Serve warm and enjoy your delicious vegetable quesadillas.
