  • 1 cup Fresh spinach chopped
  • ½ cup Feta cheese crumbled
  • 4 Eggs large
  • 1 pre-made Pie crust 9-inch
  • ½ cup Milk or cream
  • ¼ teaspoon Salt
  • ¼ teaspoon Black pepper freshly ground

  • Preheat the pressure cooker according to manufacturer instructions.
  • Whisk the eggs and milk together in a bowl until well combined.
  • Add the chopped spinach and crumbled feta to the egg mixture and stir gently.
  • Place the pie crust in a pressure cooker-safe dish and pour the egg mixture into the crust.
  • Seal the pressure cooker and cook on high pressure for 20 minutes.
  • Release the pressure and carefully remove the quiche from the cooker.
  • If desired, place the quiche in a preheated oven at 400°F (205°C) for 5–10 minutes to brown and crisp the crust.
  • Remove from oven and let cool slightly before serving.
  • Serve warm or at room temperature with a fresh green salad or light dressing.
  • Store leftovers covered in the fridge for up to three days.

Notes

For a twist, add sun-dried tomatoes or a pinch of nutmeg to the filling for extra flavor. This quiche is versatile and perfect for any meal of the day.
