Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Cut the jalapenos in half lengthwise and remove the seeds for less heat if desired. Place them on the prepared baking sheet.
Roast the jalapenos in the oven for about 10 minutes, or until they are tender and slightly charred. Remove and let cool.
In a mixing bowl, combine the softened cream cheese, shredded cheddar cheese, crumbled bacon, and a pinch of salt and pepper. Mix until well combined.
Spread a generous amount of the cheese mixture on one side of each slice of bread.
Once the jalapenos have cooled, chop them into small pieces and spread them over half of the cheese-covered slices.
Top the jalapeno slices with the remaining cheese-covered bread slices, cheese side down, to form sandwiches.
In a skillet over medium heat, melt 1 tablespoon of butter. Once melted, add the sandwiches, cooking for 3-4 minutes per side, or until golden brown and the cheese has melted.
Remove the sandwiches from the skillet, cut in half if desired, and serve warm.
