Ingredients
  

  • 1 cup orzo pasta
  • 2 cups fresh spinach, chopped
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup cream cheese, softened Dairy-free alternative can be used for vegan version.
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian seasoning
  • to taste none salt and pepper
  • for garnish none fresh parsley Optional for garnish.

Instructions
 

  • Preheat the oven to 375°F (190°C).
  • In a large oven-safe skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
  • Pour in the vegetable broth and bring to a gentle simmer. Add the orzo pasta, onion powder, Italian seasoning, salt, and pepper. Stir well and let it simmer for about 8-10 minutes, or until the orzo is almost cooked through.
  • Stir in the chopped spinach and artichoke hearts. Add the softened cream cheese and mix until well incorporated and melted.
  • Remove from heat and sprinkle mozzarella and Parmesan cheese evenly on top of the mixture.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.
  • Once done, allow to cool slightly before serving. Garnish with fresh parsley, if desired.

Notes

You can substitute the cream cheese with a dairy-free alternative for a vegan version.
Feel free to mix in other vegetables like bell peppers or mushrooms for added nutrition.
This dish can also be stored in the refrigerator for up to 3 days. Reheat in the oven or microwave before serving.
