  • 3 cups cooked chicken shredded
  • 1 can cream of chicken soup 10.5 oz
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 cup cheddar cheese shredded
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper freshly ground
  • ½ teaspoon salt to taste
  • 2 cups Ritz crackers crushed
  • 4 tablespoons butter melted
  • ½ cup chicken broth
  • 1 cup cooked pasta optional

  • In a large mixing bowl, combine shredded chicken, cream of chicken soup, sour cream, mayonnaise, and shredded cheddar cheese.
  • Season with garlic powder, onion powder, salt, and black pepper. Mix everything together until well combined.
  • Transfer the mixture into a greased pressure cooker-safe casserole dish.
  • In a separate bowl, mix crushed Ritz crackers with melted butter.
  • Sprinkle the cracker topping evenly over the chicken mixture.
  • Pour ½ cup chicken broth into the bottom of your pressure cooker and place the casserole dish on a trivet inside.
  • Seal the lid and pressure cook on high for 30 minutes. Allow natural release for 10 minutes, then quick release.
  • Serve hot as-is or with cooked pasta if desired.

Notes

Feel free to add a veggie like peas or broccoli for extra nutrition and color. To make ahead, assemble and store in fridge up to 24 hours before pressure cooking.
