This traditional Kashmiri Chai is a rich, creamy, and aromatic pink tea made with green tea leaves, baking soda, milk, and spices. A soothing and festive beverage that’s a staple at special gatherings in Pakistani households.
Add all the ingredients except the ice cold water to a pot with 8 cups of cold tap water. Bring to a boil, simmer for one hour or until the liquid is halved.
Strain out the green tea leaves.
Pour the ice cold water from a height into the tea concentrate to aerate.
Continue pouring between bowls or using a ladle for 5-7 minutes until a rich pink foam forms.
Bring the aerated tea mix back to a boil. The kahwa is now ready.
To make a cup: Take a ladle (⅓ cup) of kahwa, bring to boil, add ⅔ cup milk and splash of water, cook 2-3 minutes. Serve topped with crushed pistachios.
