In the pressure cooker, add soy sauce, honey, garlic, rice vinegar, sesame oil, ginger and red pepper flakes. Stir to combine.
Add the pork pieces to the sauce and stir to coat evenly.
Close the lid, set to high pressure, and cook for 15 minutes. Let pressure release naturally for 5 minutes, then quick release.
While pork is cooking, cook rice according to package instructions.
Steam broccoli florets and carrots until just tender.
Once pork is done, open the lid and stir. Let sit for a few minutes to thicken sauce slightly.
Assemble bowls with rice, pork, vegetables, and top with green onions and sesame seeds.
Notes
For extra flavor, marinate the pork in the sauce for 30 minutes before cooking. Adjust spice level with more or less red pepper flakes.
