Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 pounds.
  • 1 pound baby potatoes Halved.
  • 4 tablespoons olive oil Divided into 2 tablespoons for coating and 2 tablespoons for potatoes.
  • 4 cloves garlic Minced.
  • 1 cup grated Parmesan cheese
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon dried Italian herbs Or oregano/basil.
  • 1 sprig fresh parsley For garnish (optional).

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup, if desired.
  • In a large mixing bowl, combine 2 tablespoons olive oil, minced garlic, grated Parmesan cheese, salt, pepper, and dried Italian herbs. Mix well to create the garlic Parmesan coating.
  • Add the chicken breasts to the bowl and coat them evenly with the garlic Parmesan mixture. Make sure both sides of the chicken are thoroughly covered.
  • In the same bowl, add the halved baby potatoes. Drizzle with the remaining 2 tablespoons of olive oil and toss until the potatoes are well-coated.
  • Place the chicken breasts and potatoes on the prepared baking sheet. Arrange chicken in the center and spread potatoes around them, ensuring there’s enough space for air circulation.
  • Bake in the preheated oven for 25 minutes. After 25 minutes, cover the dish with aluminum foil to keep it moist and then continue baking for an additional 20 minutes, or until the chicken is no longer pink in the center and reaches an internal temperature of 165°F (75°C).
  • Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley, if desired.

Notes

You can substitute baby potatoes with regular potatoes, cut into similar-sized pieces.
Feel free to adjust the amount of garlic based on your preference for a stronger or milder garlic flavor.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
