Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup, if desired.
In a large mixing bowl, combine 2 tablespoons olive oil, minced garlic, grated Parmesan cheese, salt, pepper, and dried Italian herbs. Mix well to create the garlic Parmesan coating.
Add the chicken breasts to the bowl and coat them evenly with the garlic Parmesan mixture. Make sure both sides of the chicken are thoroughly covered.
In the same bowl, add the halved baby potatoes. Drizzle with the remaining 2 tablespoons of olive oil and toss until the potatoes are well-coated.
Place the chicken breasts and potatoes on the prepared baking sheet. Arrange chicken in the center and spread potatoes around them, ensuring there’s enough space for air circulation.
Bake in the preheated oven for 25 minutes. After 25 minutes, cover the dish with aluminum foil to keep it moist and then continue baking for an additional 20 minutes, or until the chicken is no longer pink in the center and reaches an internal temperature of 165°F (75°C).
Remove from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley, if desired.
