Ingredients
  

  • 2 cups cooked rice white or brown
  • 1 lb chicken breast diced
  • 1.5 cups corn frozen or fresh
  • 0.5 cup mayonnaise
  • 0.25 cup lime juice about 2 limes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 0.5 teaspoon smoked paprika
  • to taste salt
  • to taste pepper
  • 0.25 cup crumbled cotija cheese or feta cheese
  • 0.25 cup chopped fresh cilantro
  • 1 avocado sliced (for topping)
  • lime wedges for serving

Instructions
 

  • Cook the rice according to package directions and set aside, keeping it warm.
  • In a mixing bowl, combine the mayonnaise, lime juice, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper. Mix until smooth.
  • In a large skillet, heat a drizzle of oil over medium heat. Add the diced chicken and season with salt, pepper, and a pinch of chili powder. Cook for about 6-8 minutes or until the chicken is cooked through and golden brown.
  • Add the corn to the skillet and cook for an additional 3-5 minutes until heated through.
  • Remove the skillet from the heat and mix the mayonnaise mixture into the chicken and corn until evenly coated.
  • To assemble, place a serving of rice in a bowl, top with the chicken and corn mixture, and garnish with cotija cheese, fresh cilantro, and sliced avocado.
  • Serve with lime wedges on the side for an extra burst of flavor.

Notes
