- 4 pieces boneless, skinless chicken breasts About 1.5 lbs total.
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 teaspoon dried Italian herbs
- to taste salt
- to taste pepper
- 1 tablespoon olive oil
- to garnish fresh parsley, chopped
Begin by seasoning the chicken breasts with salt and pepper on both sides.
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remove the chicken from the skillet and set aside.
In the same skillet, reduce the heat to medium and add the butter. Allow it to melt, then add the minced garlic. Sauté the garlic for about 1-2 minutes, or until fragrant.
Slowly pour in the chicken broth and bring it to a simmer. Scrape any browned bits from the bottom of the skillet for added flavor.
Whisk in the heavy cream and dried Italian herbs. Continue stirring and simmering for about 3-4 minutes, allowing the sauce to thicken slightly.
Return the cooked chicken to the skillet, spooning the creamy sauce over each breast. Let it simmer for an additional 2-3 minutes to heat the chicken through.
Taste the sauce and adjust seasoning with more salt and pepper if needed.
Garnish with freshly chopped parsley before serving.
This dish can be refrigerated for up to 3 days. Reheat gently on the stove or in the microwave.
For a lower-calorie option, you can substitute half-and-half for heavy cream and reduce the butter.
