Ingredients
  

  • 4 pieces boneless, skinless chicken breasts About 1.5 lbs total.
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 teaspoon dried Italian herbs
  • to taste salt
  • to taste pepper
  • 1 tablespoon olive oil
  • to garnish fresh parsley, chopped

Instructions
 

  • Begin by seasoning the chicken breasts with salt and pepper on both sides.
  • In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). Remove the chicken from the skillet and set aside.
  • In the same skillet, reduce the heat to medium and add the butter. Allow it to melt, then add the minced garlic. Sauté the garlic for about 1-2 minutes, or until fragrant.
  • Slowly pour in the chicken broth and bring it to a simmer. Scrape any browned bits from the bottom of the skillet for added flavor.
  • Whisk in the heavy cream and dried Italian herbs. Continue stirring and simmering for about 3-4 minutes, allowing the sauce to thicken slightly.
  • Return the cooked chicken to the skillet, spooning the creamy sauce over each breast. Let it simmer for an additional 2-3 minutes to heat the chicken through.
  • Taste the sauce and adjust seasoning with more salt and pepper if needed.
  • Garnish with freshly chopped parsley before serving.

Notes

This dish can be refrigerated for up to 3 days. Reheat gently on the stove or in the microwave.
For a lower-calorie option, you can substitute half-and-half for heavy cream and reduce the butter.
