  • 1 ¾ cups graham cracker crumbs

  • 2 cups fresh blueberries For the topping
  • ½ cup granulated sugar For the topping
  • 1 tablespoon cornstarch For the topping
  • 2 tablespoons water For the topping
  • Juice of ½ lemon lemon juice For the topping

Instructions
 

  • Preheat the oven to 325°F (160°C).
  • In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly moistened.
  • Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove and let cool.
  • In a large mixing bowl, beat the cream cheese with an electric mixer until smooth. Gradually add sugar, mixing until well combined.
  • Add the eggs, one at a time, mixing well after each addition. Stir in vanilla extract, lemon zest, orange zest, lemon juice, and orange juice until smooth.
  • Pour the cheesecake filling over the cooled crust. Smooth the top with a rubber spatula.
  • Bake the cheesecake for 40-50 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven and let the cheesecake cool in the oven for 1 hour with the door slightly ajar.
  • Once cooled, refrigerate the cheesecake for at least 4 hours or overnight for best results.
  • To make the blueberry topping, combine blueberries, sugar, cornstarch, water, and lemon juice in a saucepan over medium heat. Cook for 5-7 minutes until the blueberries start to burst and the mixture thickens.
  • Remove the blueberry mixture from heat and let it cool.
  • Once the cheesecake has chilled, spread the blueberry topping evenly over the top before serving.

Notes

For a smoother cheesecake, make sure the cream cheese is fully softened before mixing.
You can use frozen blueberries if fresh ones are not available; just thaw them before use.
Feel free to garnish with additional citrus zest or mint leaves for presentation.
