Lock the lid and cook on high pressure for 5 minutes. Quick release the steam.
Stir in the almond milk, chia seeds, maple syrup, and vanilla extract.
Let the mixture sit for 10 minutes, stirring occasionally to prevent clumping.
Transfer pudding to serving dishes or jars.
Refrigerate for at least 1 hour to thicken, or serve warm if preferred.
Top with crushed nuts or granola before serving, if desired.
Notes
You can meal prep this pudding and store it in jars for up to 4 days in the refrigerator. Adjust maple syrup to your taste preference.
