  • ¼ teaspoon Nutmeg
  • ½ teaspoon Vanilla extract
  • Pinch Salt
  • ½ cup Water
  • 2 tablespoon Crushed nuts or granola optional topping

  • Lock the lid and cook on high pressure for 5 minutes. Quick release the steam.
  • Stir in the almond milk, chia seeds, maple syrup, and vanilla extract.
  • Let the mixture sit for 10 minutes, stirring occasionally to prevent clumping.
  • Transfer pudding to serving dishes or jars.
  • Refrigerate for at least 1 hour to thicken, or serve warm if preferred.
  • Top with crushed nuts or granola before serving, if desired.

Notes

You can meal prep this pudding and store it in jars for up to 4 days in the refrigerator. Adjust maple syrup to your taste preference.
