  • 1 tablespoon Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • ½ teaspoon Smoked paprika
  • 1 teaspoon Chipotle powder
  • ½ teaspoon Garlic powder
  • ½ teaspoon Onion powder
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper
  • ½ cup Chicken broth
  • 1 Avocado ripe, sliced
  • 4 slices Bread sourdough or bread of choice
  • 4 slices Cheddar cheese or cheese of choice
  • 1 tablespoon Mayonnaise
  • 1 tablespoon Lime juice freshly squeezed
  • To taste Fresh cilantro chopped

  • In a small bowl, mix cumin, chili powder, smoked paprika, chipotle powder, garlic powder, onion powder, salt, and black pepper.
  • Rub the spice mix evenly over chicken breasts.
  • Set pressure cooker to sauté and heat olive oil. Brown chicken breasts on both sides.
  • Add chicken broth, cover, and cook under high pressure for 10 minutes, then quick release.
  • Shred the chicken and mix with lime juice, mayonnaise, and cilantro.
  • Assemble sandwiches with bread, chicken mixture, avocado slices, and cheese. Toast until cheese melts.
