1 large skillet
1 mixing bowl
1 casserole dish (9x13 inches)
1 cutting board
1 measuring cups and spoons
1 spoon or spatula for mixing
- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, sliced
- 2 medium bell peppers, sliced (red, yellow, or green)
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 6 pieces corn or flour tortillas, cut into strips
- 15 ounces black beans, drained and rinsed
- 10 ounces diced tomatoes with green chilies
- 2 cups shredded cheddar cheese
Preheat the oven to 350°F (175°C).
In a large skillet, heat olive oil over medium-high heat. Add the sliced onion and bell peppers and cook for about 5 minutes, until they start to soften.
While the vegetables are cooking, season the chicken breasts with garlic powder, chili powder, cumin, salt, and pepper. Add the chicken to the skillet and cook for 8-10 minutes, or until the chicken is cooked through.
Remove the chicken from heat and let it cool slightly before shredding.
In a mixing bowl, combine the shredded chicken, black beans, diced tomatoes, and tortilla strips. Mix until well combined.
Spread the mixture evenly into a greased 9x13-inch casserole dish. Top with shredded cheddar cheese.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let it cool for a few minutes before serving.
Serve with toppings such as sour cream, guacamole, or fresh cilantro for added flavor.
You can customize the vegetables based on your preference, adding items like zucchini or corn.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
