Instructions
In a large mixing bowl, combine flour, sugar, baking powder, salt, and cinnamon.
Add the softened butter and mix until it resembles coarse crumbs.
Stir in eggs one at a time, then add sour cream and vanilla extract.
Fold in chopped apples gently until well incorporated.
Pour half of the batter into a greased pressure cooker pan.
In a separate bowl, mix brown sugar, walnuts, nutmeg, and maple syrup. Spread over the batter.
Top with remaining batter and smooth out evenly.
Place the pan in the pressure cooker and cook on high pressure for 30 minutes. Allow natural release.
Once cooled, drizzle with icing made from powdered sugar and milk. Serve.
Notes
This cake is perfect for any gathering or afternoon tea. Substitute walnuts with pecans if preferred.
