  • 1 measuring cups and spoons
  • 1 spatula
  • 1 grater if using fresh corn
  • 1 non-stick cooking spray or oil

Ingredients
  

  • 1 cup corn kernels fresh, frozen, or canned
  • ½ cup firm tofu crumbled
  • ½ cup all-purpose flour
  • ¼ cup green onions finely chopped
  • ¼ cup cilantro finely chopped (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup milk or plant-based milk
  • 1 large egg
  • non-stick cooking spray or oil for cooking

Instructions
 

  • Preheat your air fryer to 375°F (190°C).
  • In a mixing bowl, combine the corn, crumbled tofu, green onions, cilantro (if using), garlic powder, paprika, salt, and black pepper. Mix well.
  • In another small bowl, whisk together the flour, milk, and egg until smooth. Then, fold this mixture into the corn and tofu mixture until just combined. Be careful not to overmix.
  • Using a spoon or your hands, form small patties from the mixture, about 2-3 inches in diameter.
  • Lightly spray the air fryer basket with non-stick cooking spray or brush with a small amount of oil.
  • Place the fritters in a single layer in the air fryer basket (cook in batches if necessary), and spray the tops lightly with cooking spray or oil.
  • Cook the fritters in the air fryer for about 10 minutes. Flip them halfway through and cook for an additional 10 minutes or until golden brown and crispy.
  • Remove the fritters from the air fryer and let them cool slightly before serving.

Notes

Serve these corn fritters with a dipping sauce such as avocado dip, tahini, or your favorite salsa.
Feel free to add other spices or vegetables to the fritters, such as diced bell peppers or jalapeños for an extra kick.
These fritters can be stored in an airtight container in the refrigerator for up to 2 days. Reheat them in the air fryer for crispy results.
