Ingredients
  

  • 2 medium zucchinis About 400g.
  • 1 cup breadcrumbs About 100g.
  • ½ cup grated Parmesan cheese About 50g.
  • 2 cloves garlic Minced.
  • 1 large egg
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil For drizzling or olive oil spray.

Instructions
 

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Wash and dry the zucchinis, then grate them using a grater or a food processor.
  • In a mixing bowl, combine the grated zucchini with salt. Let it sit for about 5 minutes to draw out moisture, then squeeze the zucchini in a clean kitchen towel to remove excess water.
  • Add breadcrumbs, grated Parmesan cheese, minced garlic, egg, oregano, and black pepper to the bowl with the zucchini. Mix well until all ingredients are combined.
  • Scoop out tablespoons of the mixture and form them into small bite-sized patties.
  • Arrange the zucchini bites on the prepared baking sheet. Lightly spray with olive oil or drizzle a small amount of olive oil over the bites.
  • Bake in the preheated oven for 20-25 minutes, until golden brown and crispy on the outside.
  • Remove from the oven and let cool slightly before serving.

Notes

These zucchini bites can be served with marinara sauce, yogurt dip, or your favorite dip.
Feel free to add herbs or spices according to your preference, such as red pepper flakes for a bit of heat.
Leftovers can be kept in the refrigerator for up to 3 days and reheated in the oven for best results.
