Ingredients
  

  • 2 medium zucchinis About 500g.
  • 1 cup breadcrumbs 100g.
  • ½ cup grated Parmesan cheese 50g.
  • 2 large eggs
  • 2 cloves garlic Minced.
  • 1 teaspoon salt 6g.
  • ½ teaspoon black pepper 2g.
  • 1 teaspoon dried oregano 1g.
  • 1 tablespoon olive oil For brushing or spray.

Instructions
 

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper, if using.
  • Rinse the zucchinis and trim the ends. Grate them using a grater or food processor.
  • Place the grated zucchini in a clean towel or cheesecloth and squeeze out excess moisture.
  • In a large mixing bowl, combine the grated zucchini, breadcrumbs, grated Parmesan, eggs, minced garlic, salt, black pepper, and oregano. Mix well until all ingredients are fully combined.
  • Use your hands to form small balls or patties from the mixture, about 1-2 inches wide. Place them on the lined baking sheet, spacing them apart.
  • Lightly spray the tops with olive oil or brush with olive oil.
  • Bake in the preheated oven for 20 minutes, flipping halfway through, until they are golden brown and crispy.
  • Remove from the oven and let them cool slightly before serving.

Notes

Feel free to add other herbs and spices to customize the flavor to your liking.
Serve with a dipping sauce, such as marinara or garlic aioli, for an extra flavor boost.
Leftover zucchini bites can be stored in the refrigerator for up to 2 days and reheated in the oven for best results.
