  • 4 cups shredded or spiralized zucchini must get squeezed dry first (about two large zucchinis)
  • ½ cup shredded mozzarella cheese adds gooeyness and a nice melty texture
  • cup gluten free all purpose flour to help the crust hold together and get golden
  • 1 clove garlic pressed or minced
  • 1 teaspoon dried oregano for herby depth and aroma
  • 1 teaspoon basil dried
  • 1 egg beaten to bind everything tightly
  • 1 ½ teaspoons salt divided between the crust and toppings
  • 2 tablespoons pizza sauce for spreading on crust
  • asparagus sliced for topping freshness
  • cherry tomatoes sliced for topping freshness
  • 2 eggs optional, crack over pizza before last bake for extra protein
  • grated parmesan for sprinkling on top
  • fresh herbs for sprinkling on top

  • Preheat your oven to 425°F for a good hot start to crisp up the crust.
  • Squeeze excess moisture from your shredded zucchini using a towel or cheesecloth to avoid soggy dough.
  • In a big bowl, mix zucchini, mozzarella, gluten free flour, garlic, oregano, basil, beaten egg, and 1 teaspoon of salt until a thick dough forms.

  • Line a baking sheet with parchment paper and spread the dough into a 9-inch circular crust.
  • Bake the crust in the preheated oven for 15-20 minutes until golden brown and set.
  • Remove crust and spread pizza sauce evenly over it.

  • Toss asparagus and cherry tomatoes on top, sprinkle with remaining salt, and season with salt and pepper if desired.
