  • 1 cup Land O Lakes Extra Creamy European Style Unsalted Butter melted
  • 2 cups light brown sugar soft, caramel sweetness
  • 4 teaspoons vanilla extract
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 cup white chocolate chips melt in the most luscious way
  • ½ cup blueberries fresh or frozen

  • Preheat your oven to 350°F and grease your baking dish.
  • Melt butter in a large bowl, mix in the brown sugar until smooth. Add vanilla and eggs, beat until silky.
  • Gradually add flour, baking powder, and baking soda. Fold in white chocolate chips and blueberries gently.
  • Pour batter into greased dish, place on trivet in pressure cooker with some broth depth beneath.
  • Seal pressure cooker, set to high pressure and cook for 20 minutes. Release pressure slowly.
  • Finish by baking in the oven for about 10 minutes to develop a crust.
  • Let blondies cool for at least 15 minutes before slicing into squares.
