Preheat your oven to 400°F (200°C). You wanna get those sweet potatoes roasting nice and quick right away.
In a bowl, toss diced sweet potatoes with 1 tablespoon olive oil plus onion powder, garlic powder, paprika, and salt. Mix well to coat all pieces evenly.
Spread them out on a baking sheet, making sure they got enough space to crisp up a bit. Let them roast for 25-30 minutes until they’re tender and golden.
While that’s going, heat the remaining tablespoon of olive oil in a skillet over medium heat. This gets your beef ready for the taco flavor punch.
Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks. No big clumps allowed!
Stir in taco seasoning and splash water to help it meld into the meat. Let it simmer 3-4 minutes for the seasoning magic to soak in.
When your sweet potatoes are done, grab your serving bowls. Layer those roasted sweet potatoes, then the seasoned ground beef, a big scoop of cottage cheese, and slices of those ripe avocados.
Top it off with a drizzle of hot honey if you like a little sweet heat, then dig in before it’s all gone!
