  • 2 tablespoon olive oil divided for roasting and cooking
  • 2 cups creamy cottage cheese adds a nice tangy creaminess
  • 1-2 ripe avocados sliced for buttery goodness
  • 1 lb lean ground beef or swap in chicken or turkey if you like
  • 1 packet taco seasoning about 3 tbsp; I like Siete for the flavor punch
  • 2 sweet potatoes peeled and diced for that sweet, soft bite
  • ½ teaspoon onion powder adds a mellow savory touch
  • ½ teaspoon garlic powder because garlic's gotta be there
  • ½ teaspoon paprika for that smoky warmth
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½-1 cup fresh cilantro chopped for fresh herby zing
  • Hot honey for drizzlin'
  • Optional extras sliced jalapeños, red pepper flakes, or a squeeze of lime juice

  • Preheat your oven to 400 degrees Fahrenheit. This warms things up nice for roasting those sweet potatoes until golden and tender.
  • Toss your diced sweet potatoes with a tablespoon of olive oil, onion powder, garlic powder, paprika, and salt. Spread 'em out on a baking sheet so they roast evenly not crowded or soggy.
  • Let them bake for about 25 to 30 minutes. You'll smell that sweet and savory bouquet rising as they get golden on the outside and soft inside.
  • While that's going, heat up your other tablespoon of olive oil in a skillet over medium. Add your ground beef (or chicken/turkey) and cook it all till it browns nicely, about 5 to 7 minutes.
  • Now sprinkle in your taco seasoning and stir through for a couple minutes. The spices bloom and coat every bit of meat, kinda like a flavor hug.
  • Once your sweet potatoes finish, pull them out and get ready to build your bowl. Start with the roasted sweet potatoes as base, add that seasoned beef over top.
  • Next comes the creamy cottage cheese dolloped on generously. Then lay out your avocado slices-soft and fresh, perfect against the warm richness.
    Drizzle some hot honey if you're feeling sweet-sassy vibes. Add cilantro on top and if you like, a squeeze of lime or some jalapeños for heat. You ready to dig in? Yum!
