  • 100 g elbow pasta dry
  • 200 g canned tuna drained
  • cup light sour cream
  • cup light mayonnaise
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon mustard Dijon or yellow
  • 1 tablespoon lemon juice
  • ¼ cup gherkin pickles diced
  • 3 radishes large, diced (optional)
  • 1 Lebanese cucumber diced
  • ½ red bell pepper diced
  • ½ red onion finely diced

  • Bring a large pot of salted water to a boil.
  • Add elbow pasta and cook until al dente, then drain and set aside to cool.
  • In a large bowl, combine cooled pasta and drained tuna.
  • Add diced cucumber, radishes, bell pepper, and red onion.
  • In a separate bowl, whisk sour cream, mayonnaise, mustard, lemon juice, salt, and pepper, then pour over salad and toss to coat.
  • Chill in the fridge for at least 30 minutes before serving.

Notes

Store in fridge for up to 3 days in an airtight container. Pasta is best slightly undercooked to avoid mushiness when mixed with the dressing later.
