Mix chicken breasts with soy sauce, lime juice, ginger, garlic, salt, and pepper in a bowl. Let marinate for 30 minutes.
Set pressure cooker to sauté mode, heat olive oil, brown marinated chicken until golden.
Add coconut milk and jasmine rice into cooker with chicken; stir to combine.
Seal lid, set to high pressure for 8 minutes.
Quick release steam, then let pot rest for 5 minutes.
Fluff rice, plate chicken on top, sprinkle green onions.
