The Ultimate Creamy Potato Soup

An easy and delicious creamy potato soup recipe that can be made in just one pot! Loaded with bacon and creamy potato goodness, this is a favorite comfort food in my household.

Ingredients
  

Main ingredients

  • 6 strips Bacon uncooked, cut into small pieces
  • 3 tablespoons Butter unsalted or salted will work
  • 1 medium Yellow onion chopped, about 1.5 cup/200g
  • 3 large Garlic cloves minced
  • cup All-purpose flour 42g
  • 2 ½ lbs Gold potatoes peeled and diced into 1-inch pieces, around 1.15kg
  • 4 cups Chicken broth 945ml
  • 2 cups Milk 475ml
  • cup Heavy cream 155ml
  • 1 ½ teaspoons Salt to taste
  • 1 teaspoon Ground pepper to taste
  • ¼ to ½ teaspoon Ancho chili powder for a little warmth
  • cup Sour cream 160g
  • to taste Optional toppings shredded cheddar cheese, chives, extra sour cream, and crispy bacon

Instructions

  • First, in your pot over medium heat, cook the bacon until it’s crispy. Scoop it out and set it aside, keeping the drippings in there.
  • Add butter to those drippings and let it melt. Toss in chopped onion. Let it soften about 5 minutes, stirring now and then.
  • Throw in minced garlic, cooking for just a minute till it smells real good and fragrant.
  • Sprinkle flour over the mixture and stir constantly for 2 minutes. This makes your roux, thickening the soup nicely.
  • Slowly pour chicken broth while whisking, making it all smooth with no lumps.
  • Put diced potatoes and salt inside. Bring soup to boil and then simmer for 20 minutes until potatoes feel tender when you poke ’em.
  • Stir in milk and heavy cream. Cook another 5 minutes, stirring sometimes to keep things even.
  • Use an immersion blender to puree until creamy. Or carefully blend in batches if you don’t have one. Add toppings like bacon and cheese when serving.
  • Allow soup to simmer for 15 minutes before serving. Top with additional sour cream, bacon, cheddar cheese, or chives. Enjoy!
