  • 2 slices sourdough bread
  • 2 slices sharp cheddar cheese
  • 1 tablespoon unsalted butter
  • 1 tablespoon hot honey

  • Grab your butter and spread a tablespoon on one side of each slice of sourdough bread. Be generous enough to get those edges well coated.
  • Heat your skillet over medium heat until it’s hot but not smoking. You’ll know it’s ready when the float valve flickers a bit from the heat.
  • Place one slice of bread into the skillet, butter side down. Right away you’ll smell that buttery aroma starting, and your anticipation grows.
  • Layer the cheddar cheese over the bread in the skillet. Then don’t forget that hot honey drizzle right on top of the cheese—that’s where the real flavor happens.
  • Take the second slice of bread and place it on top, butter side up so the skillet cooks that top golden brown too.
  • Let it cook for about 3-4 minutes without moving it around. Watch for those steam cues coming off the sandwich, a sure sign the cheese is melting nice.
  • Carefully flip the grilled cheese with your spatula. Cook the other side until it’s golden and the cheese is all melty inside, another 3 minutes or so.
  • Pull the grilled cheese off the skillet and let it cool for a minute or two before slicing. This keeps the cheese from oozing everywhere and makes it easier to handle when you bite in.

Notes

If you’re kinda in a rush and still wanna good grilled cheese, melt the butter in the microwave for quick spreading. Use leftover shredded cheddar for quicker melting and prepare the hot honey drizzle in advance.
