Main ingredients

  • 2 tablespoons olive oil to get everything golden and flavorful
  • 4 bone-in, skin-on chicken thighs juicy and tender
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 lemon thinly sliced, seeds removed
  • 1 medium onion diced small
  • 3 cloves garlic minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth with thyme and red pepper flakes

  • Heat your olive oil in the pot over medium-high heat till it’s shimmering. You want good sizzle for the chicken.
  • Season chicken thighs with that salt and pepper. Lay ’em skin-side down and sear until golden and crisp, about 5 minutes each side. Then take ’em out and set aside.
  • Toss your lemon slices in the hot pot. Cook till they’re caramelized on both sides, like 2-3 minutes a side. Then pull ’em out and set aside with the chicken.
  • In the same pot, add diced onion. Sauté until softened, about 4 minutes. Your kitchen’s already smelling dang good.
  • Stir in garlic and let it cook for just a minute so it wakes up but doesn’t burn.
  • Add rice next and stir it all around to coat with that onion and garlic mix.
  • Pour in chicken broth, add thyme and red pepper flakes, stir well. Then nestle the chicken thighs back skin-up in the pot. Top with those caramelized lemon slices.
  • Turn heat to boil. Once boilin’, cover the pot and lower the heat to simmer.
  • Let it cook about 20 minutes till rice is tender and chicken is done.
  • Let it sit covered another 5 minutes to finish with natural release.
  • Fluff the rice before serving and enjoy hot.

Notes

Let food cool before storing in airtight containers. Refrigerate for 3–4 days or freeze portions for longer term. Reheat with a splash of water or broth to keep rice fluffy.
