Instructions
Instructions
Grab a skillet and melt your 3 tablespoons of butter over medium heat. Toss in those thinly sliced onions. Keep stirring now and then, waitin’ for them to caramelize up like a sweet golden brown treat. This takes about 15 minutes.
Season the chicken breast with smoked paprika, ancho chili powder, and salt. Tack that seasoned chicken into a pan on medium heat, searin’ each side about 6-8 minutes till fully cooked through.
Rest the chicken a few, then shred it up with two forks. Preheat your oven to around 475°F or follow dough package instructions. Roll out your pizza dough on a dusted surface to your fave thickness.
Pop the dough onto your pizza stone or baking sheet ready for toppings. Slather on the BBQ sauce over the dough, don’t hold back. Scatter the shredded chicken over, then your gorgeous caramelized onions. Top with mozzarella cheese.
Bake for 15-20 minutes till cheese bubbles and crust turns golden brown. Watch for those little visual signs, crust edges crisp and cheese stretch all melty. Cool a few minutes before drizzling creamy ranch all over and sprinkling fresh cilantro.
Notes
Serve with additional BBQ sauce and ranch dressing for dipping if desired.
