The BEST Easy Fried Rice

This easy fried rice is quick, simple, and the BEST when made with day-old rice in a pressure cooker.

  • 3 cups cooked rice *Day old cold rice works best
  • 2 tablespoons sesame oil
  • 1 cup chopped white onion about 1 small onion
  • 1 cup frozen peas and carrots
  • 2 to 3 tablespoons soy sauce more or less to taste
  • 2 lightly beaten eggs
  • 2 tablespoons chopped green onions optional but dang good
  • a pinch salt and pepper to your liking
  • cooking spray or a little extra oil for frying
  • nonstick spray or oil to keep stuff from sticking to your pressure cooker pan

  • Heat sesame oil using your pressure cooker’s sauté mode till it’s nice and hot.
  • Add chopped onion and sauté for about 2 or 3 minutes till translucent and smelling sweet.
  • Stir in frozen peas and carrots and cook another 3 to 4 minutes, stirring now and then.
  • Push veggies to one side of your pot, add beaten eggs to the other side, and scramble until cooked through.
  • Mix the eggs with the veggies well so everything's combined nice.
  • Add the cooked rice on top and drizzle soy sauce all over. Stir to mix well and spread the flavors evenly.
  • Close the lid, make sure the float valve’s up, set to high pressure for just 3 minutes, then use quick release when time's up to keep texture perfect.
  • After that, you spot the steam cues and float valve dropping which tells you it’s safe to open. Give everything one last stir, toss on chopped green onions if you got 'em, and you’re ready to serve.

Notes

Serve warm with an optional garnish of fresh green onions.
