Heat oil in pressure cooker over medium heat. Add garlic, onion, carrots, and celery. Sauté for 5 to 7 minutes.
Stir in grated ginger and turmeric. Cook for 2 minutes until fragrant.
Pour in chicken broth. Add chicken and fresh herbs. Stir gently.
Seal the lid and set pressure cooker to high pressure for 20 minutes.
Allow natural release for 10 minutes, then carefully open the lid.
Remove chicken, shred with forks, and return to pot.
Add couscous and peas. Simmer until couscous is tender.
Season with salt and pepper to taste. Serve hot.
Notes
Store in airtight container in fridge for up to 4 days. Freeze for longer storage. Reheat with a splash of broth if soup thickens.
