Peel your carrots and spiralize them into noodle-like strands.
In a large bowl, mix the carrot noodles, red bell pepper slices, edamame, chopped cilantro, and green onions.
In a separate bowl, whisk together rice vinegar, soy sauce, lime juice, honey, garlic, peanut butter, salt, and red pepper flakes until smooth.
Pour dressing over the veggie mix and toss everything until coated well. Chill in the fridge for at least 15 minutes.
