  • 5 Carrots large, peeled and spiralized
  • 1 Red bell pepper thinly sliced
  • 1 cup Edamame cooked and shelled
  • 0.25 cup Fresh cilantro chopped
  • 0.5 cup Green onions chopped
  • 2 tablespoons Rice vinegar
  • 1 tablespoon Soy sauce
  • 1 tablespoon Lime juice fresh
  • 1 tablespoon Honey
  • 1 teaspoon Garlic minced
  • 0.25 cup Creamy peanut butter
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Crushed red pepper flakes

  • Peel your carrots and spiralize them into noodle-like strands.
  • In a large bowl, mix the carrot noodles, red bell pepper slices, edamame, chopped cilantro, and green onions.
  • In a separate bowl, whisk together rice vinegar, soy sauce, lime juice, honey, garlic, peanut butter, salt, and red pepper flakes until smooth.
  • Pour dressing over the veggie mix and toss everything until coated well. Chill in the fridge for at least 15 minutes.
  • Serve cold and enjoy your Thai Peanut Carrot Noodles.

Notes

Store leftovers in the fridge and enjoy within 2-3 days. For extra freshness, keep dressing separate until serving.
