  • 1 pound chicken tenders marinated in toasted sesame oil, kosher salt, and black pepper
  • 4 leaves Napa cabbage chopped
  • 1 carrot julienned
  • ½ red bell pepper thinly sliced
  • 4 radishes thinly sliced
  • ½ cup fresh cilantro coarsely chopped
  • 1 tablespoon tamari
  • 1 tablespoon olive oil
  • 1 tablespoon rice vinegar
  • 8 tortillas gluten-free or spinach

  • Marinate your chicken tenders in the toasted sesame oil, kosher salt, and ground black pepper. Let those flavors soak in for at least 15 minutes.
  • Heat a skillet over medium heat and cook your chicken for about 5-7 minutes on each side. Ensure the chicken is cooked through but still juicy.
  • Rest the chicken for a few minutes, then slice into thin strips for easy wrapping.
  • Whisk together tamari, olive oil, and rice vinegar in a bowl to get the peanut sauce rolling.
  • Lay out Napa cabbage leaves and start with laying down some chicken slices.
  • Add carrot, bell pepper, radishes, and cilantro on top with a drizzle of peanut sauce.
  • Wrap the cabbage leaf tightly around chicken and veggies.
  • Repeat with remaining ingredients. Serve with extra peanut sauce on the side.

Notes

Meal prepping: Pack ingredients separately to make the wrap fresh when ready to eat. Warm tortillas under a damp paper towel if needed to make them pliable.
