  • 1 pound chicken tenders perfect for quick cooking and staying juicy
  • 2 tablespoons toasted sesame oil adds a nutty, warm base flavor
  • kosher salt to season just right
  • ground black pepper to season just right
  • 4 leaves Napa cabbage chopped up for that crunchy, fresh bite
  • 1 carrot julienned into thin, colorful strips
  • 0.5 red bell pepper thinly sliced
  • 4 medium radishes sliced thin
  • 0.5 cup fresh cilantro coarsely chopped
  • 1 tablespoon tamari for that salty umami kick
  • 1 tablespoon light olive oil
  • 1 tablespoon rice vinegar
  • peanut sauce homemade or store-bought
  • 8 gluten-free tortillas spinach and/or regular

  • Start by heating your toasted sesame oil in a skillet over medium heat so it's nice and warm.
  • Season your chicken tenders well with kosher salt and ground black pepper on all sides.
  • Place the chicken in the skillet, letting each side cook about 6 to 8 minutes until browned and fully cooked through.
  • Take the chicken off and let it rest for a few minutes while you prep the veggies.
  • In a large bowl toss the chopped Napa cabbage, carrot strips, red bell pepper, radishes, and cilantro for a fresh, crunchy filling.
  • Whisk together your tamari and peanut sauce in a small bowl to make a smooth, tasty drizzle.
  • Slice the rested chicken thinly, then load a Napa cabbage leaf with veggies, topped by slices of chicken.
  • Drizzle peanut sauce over the filling, wrap it up, and get ready to munch on your dang good wraps.

Notes

Meal prepping: Pack the ingredients separately so that you can make the wrap fresh when you are ready to eat. You'll enjoy your wrap so much more if it's not soggy from having been already fully prepped and allowed to sit around for too long. If your tortillas aren't very pliable or they have a tendency of cracking or splitting when you roll them, warm the tortillas under a damp paper towel in a microwave for about 10 seconds.
