Ingredients
  

  • 1 lb boneless, skinless chicken thighs or breasts
  • 1 cup uncooked jasmine rice
  • 1 cup water for rice
  • 1 cup teriyaki sauce
  • 2 tablespoons vegetable oil
  • 2 cups mixed vegetables (broccoli, bell peppers, carrots)
  • 2 pieces green onions, chopped
  • 1 tablespoon sesame seeds optional, for garnish

Instructions
 

  • Rinse the jasmine rice under cold water until the water runs clear. Cook the rice according to the manufacturer’s instructions in a rice cooker or pot with 1 cup of water.
  • While the rice is cooking, cut the chicken into bite-sized pieces.
  • In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the chicken pieces and cook until they are browned and cooked through, about 5-7 minutes.
  • Add the teriyaki sauce to the skillet with the chicken and stir to coat. Cook for an additional 2-3 minutes until the sauce thickens slightly.
  • In the meantime, steam or sauté the mixed vegetables in a separate pan until they are crisp-tender, about 3-5 minutes.
  • Once the rice is cooked, fluff it with a fork and divide it among 4 bowls.
  • Top each bowl with the teriyaki chicken, mixed vegetables, and garnish with chopped green onions and sesame seeds if desired.
