  • 1 cup rice uncooked
  • 1 lb ground beef
  • 1 can black beans drained and rinsed
  • 1 cup corn frozen or canned
  • 1 packet taco seasoning
  • 1 cup shredded cheese
  • 2 cups shredded lettuce
  • 1 tomato diced
  • 1 avocado sliced
  • Sour cream to taste

  • Cook the rice according to package instructions. You can do this ahead or right before starting the beef mix.
  • In a large skillet, brown the ground beef over medium heat until fully cooked. Remember to break it up so it cooks evenly.
  • Stir in the taco seasoning and add the black beans and corn; cook for 5 minutes so flavors really mingle.
  • Mix the cooked rice into the skillet with the beef mixture. Make sure it’s well combined so every bite’s a flavor hit.
  • Serve the taco rice in bowls and top with shredded lettuce, diced tomatoes, sliced avocado, and cheese for all the layers.
  • Add sour cream to each bowl as desired. Don’t be shy, that creamy tang takes it way up.
