Preheat your oven to 425°F (220°C).
Wash and peel the potatoes. Cut them into fries, about ¼ inch thick.
In a large mixing bowl, toss the cut fries with vegetable oil, chili powder, paprika, garlic powder, onion powder, cumin, salt, and black pepper until evenly coated.
Spread the seasoned fries in a single layer on a baking sheet. Bake for 20 minutes or until golden brown and crispy, flipping halfway through for even cooking.
While the fries are baking, prepare the cheesy dip by melting cheddar cheese in a small frying pan over low heat, stirring until smooth.
Once the fries are done, remove them from the oven and let them cool slightly. Serve the fries in a serving bowl.
Drizzle the melted cheese over the fries and serve with sour cream and salsa on the side for dipping.
