Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup, if desired.
Wash the cauliflower and remove the leaves and stem. Cut the cauliflower into bite-sized florets.
In a mixing bowl, combine the olive oil, honey, sriracha sauce, soy sauce, minced garlic, smoked paprika, salt, and black pepper. Whisk until well mixed.
Add the cauliflower florets to the mixing bowl and toss until they are evenly coated in the sauce.
Spread the coated cauliflower in a single layer on the prepared baking sheet.
Bake in the preheated oven for 20-25 minutes or until the cauliflower is tender and slightly caramelized, flipping the florets halfway through for even cooking.
Once done, remove from the oven and let cool for a few minutes.
Garnish with fresh cilantro or chopped green onions, if desired, before serving.
