½cupMexican crema or sour cream

2-3tablespoonsmilkto thin sauce
1ripe avocadochopped
½cupcotija cheeseshredded
½cupchopped fresh cilantro
1limecut into wedges

Mix sauce ingredients in a bowl: mayo, sour cream, tajin, lime and milk. Set aside.
Season chicken breasts with salt, pepper, chili powder, cumin, paprika, garlic powder, and oregano. Heat olive oil in skillet and cook chicken until cooked through, flipping once. Remove to a plate.
Add corn, onion, and jalapeño to skillet. Sauté until corn is charred and tender.
Stir in half of the sauce to make creamy street corn mixture.
Spoon rice into a bowl. Top with chicken, street corn, and garnish with avocado, cheese, and cilantro. Serve with lime wedge and extra sauce.
