  • 1 tablespoon avocado oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin powder
  • ½ teaspoon garlic powder or 2 minced garlic cloves
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup sweet corn kernels grilled if you can
  • ¼ cup red onion thinly sliced
  • 1 cup sour cream mixed with 2 tablespoons mayonnaise
  • ½ cup cotija cheese crumbled
  • 1 fresh cilantro to garnish
  • 3 cups cooked rice ready for bowl foundation

  • Preheat grill or stovetop pan to medium-high heat.
  • Mix lime juice, avocado oil, chili powder, cumin, garlic powder, salt, and pepper in a bowl.
  • Coat chicken thighs in spice mixture.
  • Grill chicken for about 7-8 minutes per side, until golden brown and cooked through.
  • Let chicken rest after cooking, then slice.
  • In serving bowl, combine sliced chicken, grilled corn, and red onions.
  • Layer bowl with rice, chicken-corn mix, creamy sauce, cotija cheese, and cilantro. Squeeze lime before serving.

Serve with extra lime wedges for added zesty flavor.
