Instructions
Cream butter and sugar until fluffy, then stir in vanilla and almond extract.
Sift dry ingredients and alternately mix with buttermilk into the creamed mixture.
Whisk egg whites to soft peaks and fold into batter.
Add pink food coloring and strawberries; fold gently to preserve texture.
Grease pressure cooker pan, pour in batter, and place on trivet inside cooker with 1 cup water underneath.
Seal lid, cook on high pressure for 30 minutes.
Let pressure release naturally, remove cake carefully, cool and glaze.
Notes
Cool completely before glazing. Store leftovers in airtight container for 3 days or freeze individual slices.
