Ingredients
  

Cake Batter

  • ½ cup unsalted butter very soft
  • 1 ½ cups granulated sugar
  • 1 tablespoon vanilla extract clear or regular
  • ¼ teaspoon almond extract
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup buttermilk
  • 2 cups cake flour
  • 3 egg whites large
  • 4-8 drops pink food coloring Wilton Pink Rose preferred
  • ½ cup fresh strawberries diced

Instructions

  • Cream butter and sugar until fluffy, then stir in vanilla and almond extract.
  • Sift dry ingredients and alternately mix with buttermilk into the creamed mixture.
  • Whisk egg whites to soft peaks and fold into batter.
  • Add pink food coloring and strawberries; fold gently to preserve texture.
  • Grease pressure cooker pan, pour in batter, and place on trivet inside cooker with 1 cup water underneath.
  • Seal lid, cook on high pressure for 30 minutes.
  • Let pressure release naturally, remove cake carefully, cool and glaze.

Notes

Cool completely before glazing. Store leftovers in airtight container for 3 days or freeze individual slices.
