Preheat the oven to 350°F (175°C). Grease and lightly flour the 9x13 inch baking pan or line it with parchment paper for easy removal.
In a large mixing bowl, combine the chocolate cake mix, water, vegetable oil, and eggs. Mix on medium speed until well combined, about 3-4 minutes.
Pour half of the cake batter into the prepared baking pan.
In another bowl, beat the softened cream cheese with an electric mixer until smooth. Add powdered sugar and vanilla extract, mixing until well combined.
Spread the cream cheese mixture evenly over the first layer of batter in the pan.
Sprinkle chopped strawberries over the cream cheese layer.
Pour the remaining chocolate cake batter over the strawberries and cream cheese.
If desired, sprinkle shredded coconut and chopped nuts on top of the final layer of batter.
Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
Serve with whipped cream or strawberry frosting, if desired.
